It's a matter of choice, If they don't want to get convinced, no great power in the world can change thier mind.
So I ll suggest go for the trip and inform them once u reach your desired place in both scenarios, you will get pastries from your parents

It is not that they don't respect your independence. They are just worried about your well being. You just need to convince them that you will be okay without any familiar company. 1. Are you traveling alone or joining a group of random travelers ? If it is an organized trip in which random people come from different places, assemble at a point and then venture out together. There are many such forums where random travelers discuss and plan tours. Check them out and also show your parents that IT IS SAFE. 2. Use the power of technology. Tell your parents how they can be assured of your well-being through GPS check-ins that YOU would be doing to keep them informed. Or, a phone call/sms at regular intervals (twice a day, maybe if they are too concerned). 3. If you want to venture out in the hills for trekking or some other adventure activity, I would recommend you travel in a group of at least three. You never know when you will need their help and vice versa. 4. Start with popular destinations to help your parents get accustomed to you traveling alone. They will more likely be allowing you to travel to a popular place, or even a place where you some relative or friend. You don't have to stay at their place or anything, but parents will feel secured that there is someone to reach out to in case they get worried. Cheers. Enjoy the traveling experience.
